Nutella No Bake CookiesThese cookies take me way back to a small kitchen in the old farmhouse I lived in as a little girl.  We didn’t get a lot of treats growing up, but this was one we were occasionally allowed to make.  I remember smelling that intoxicating chocolaty smell while we were cooking, and then the long wait for the cookies to be cool enough that they didn’t fall apart.  Sometimes, we didn’t wait that long, and our fingers and faces were covered in sticky, still soft chocolate.  Sometimes, if we were really good and saved a few cookies for the next day, my dad would let us break them up into our oatmeal and eat them for breakfast.  It wasn’t cocoa puffs, but it was still delicious.

Ever since then, Chocolate no-bake cookies have been a comfort treat for me.  It is fun to change up the recipe a bit sometimes and try a twist on the old standby, so for this recipe we switched out our normal peanut butter in exchange for Nutella.  We also added a pecan on top for decoration and a bit of crunch.  It must have worked because we only had a couple left over to put in our oatmeal the following morning.

Here’s the recipe:


  • 1/2 Cup Butter
  • 2 Cups Sugar
  • 1/4 Cup Cocoa
  • 1/2 Cup Milk
  • 3 Cups Quick Oats
  • 1/2 Cup Nutella
  • 1 tsp Vanilla
  • Pecan Halves

Instructions:  Combine butter, sugar, cocoa and milk in a sauce pan over medium heat.  Boil the mixture for about 3 minutes.  Remove from the heat and add the Nutella and vanilla.  Stir until the Nutella is completely combined, and the mixture looks like a hot chocolate sauce.  Then add in your oats.  The amount seems to vary a little bit, so if it is looking dry don’t go all the way to 3 cups, but it should be close to that number.

Spoon the cookie mixture onto a baking sheet lined with wax paper.  Then top each cookie with a pecan half.  Allow the cookies to cool completely in the refrigerator and serve.
