Each day, around 3:30 in the afternoon there is a stampede to my kitchen. My kids, fresh off the bus, come in the house and claim they are STARVING!! If I don’t have an after-school-snack prepped and ready to eat, the ravenous little beasts tear apart the kitchen looking for something to eat, usually leaving a trail of crumbs in their wake.
So I try to prepare a snack. I don’t want to go big. It’s too close to dinner. I’ve already made 2 1/2 meals by then, and I’m running out of ideas. It does seem like a good time to fit fruits and veggies in though. After all, if they’re STARVING, they’ll eat anything right??
This week I made Chocolate Chip Peanut Butter Celery Boats. Celery is a hard sell at my house. My kids eat a serious variety of vegetables, but something about the stringy crunch of celery gets to them. I’ve tried the raisin boats before with little success. This time, I took it up a notch and added some chocolate chips. I was sneaky and added the tiny, itty-bitty, cute chocolate chips that my girls find so irresistible.
Verdict: My 3-year-old son was not convinced. However, my three older girls gobbled them up and asked for seconds and thirds. I consider that a substantial victory. Score one for mom!
