One of the problems I encounter every Easter morning is the abundance of candy lying around before breakfast. All of the kids are so excited to find their baskets and search for eggs that they express very little interest in our regular oatmeal. After pondering for some time about the perfect menu to keep them focused on a nutritious breakfast, I came up with Easter Egg Pancakes.
Seriously, these are awesome! The pancakes are colorful, shaped like eggs, and the kids get to decorate them however they would like before eating. I managed to get some grain in their diet, a lot of fruit, and they were excited about having something besides candy to eat on Easter morning.These little breakfast delights were pretty easy to make. I whipped up my favorite pancake recipe and divided the batter into 5 small bowls. Then I added a few drops of coloring into each bowl so we had a variety of colors to choose from.
Then, I poured the batter into a metal, egg shaped cookie cutter that was sitting on a hot skillet. Once the batter was starting to set up, I removed the cookie cutter and finished cooking each pancake.
You’ll want to prepare a variety of fun toppings for decorating the pancake eggs. Some great topping options are:
- Strawberries
- Blueberries
- Bananas
- Apples
- Grapes
- Nuts
- Mini Chocolate Chips
- Whip Cream (In a can so it’s easy to draw with)
- Chocolate Syrup
- Candy Sprinkles
- and any other fun things you think of.
Let the decorating begin!! Create lines and dots with the whip cream. Make faces with your fruit. Experiment with polka dots, color schemes, and textures. You really can’t go wrong. Once you’ve finished your masterpiece, eat and enjoy!
