I love all things lemon and I love brownies, so wouldn’t it be amazing if you could combine the two. Well as it turns out, you can. Get all the gooey chewiness of the brownie and the fresh flavor of the lemon combined into one tasty bite. I searched for recipes and didn’t come up with much that looked like what I wanted, so I sorta made up my own Lemon Brownie recipe using a cake mix.
These were a huge hit! I’ve made them in 9×9 inch baking pans and as browning bites, and they are delicious both ways. I prefer the brownie bites when I am taking them outside the home to serve because the individual brownies are the perfect bite sized bit of sunshine.
Lemon Brownie Recipe:
Ingredients
Lemon Cake Mix
1 tbs Lemon Juice
1/2 Cup of Oil
3 Eggs
Preheat oven to 350 degrees. Sift your cake mix into a mixing bowl. Add in the oil, lemon juice and eggs. Stir until just combined. Pour batter into a greased 9×9 inch square pan or for brownie bites, a mini muffin tin. Bake for 15 minutes for the square pan or 10 minutes for the mini muffin tin. Allow brownies to cool before frosting. *Tip: When using a mini muffin tin, allow the brownies to cool in the pan, on the counter until not longer hot. Then place the pan and brownies into the freezer for a few minutes to harden. Pull the pan out and pop the brownies right out onto the counter.
My mini muffin tin is one of my favorite kitchen gadgets. I use it to make mini breakfast muffins for the kiddos or to create perfect bite-sized desserts to share at parties. This silicon version is great because you can easily pop the muffins, cupcakes, or brownies right out of the pan with a push of your finger.
Lemon Buttercream Frosting
1/2 Cup Butter Softened
3 – 3 1/2 Cups of Powdered Sugar
2 Tbsp of Lemon Juice
Yellow Food Coloring
Yellow Sprinkles and Lemon Head Candies (optional)
Beat butter until smooth. Then add the powdered sugar and beat until all the lumps are gone and the frosting is very stiff. Add in the lemon juice. Add in the rest of the sugar a spoonful at a time until you have the consistency that you want. Add 5 drops of yellow food coloring or more if desired to get the yellow color you want. Frost brownies or pipe onto brownie bites and decorate with sprinkles and candies.
