I try to serve mychildren a healthy breakfast every morning. Having said that, we had a bad week this past week and went through an entire bag of Marshmallow Matties. I cleaned out their systems this morning though with some delicious oatmeal, so hopefully we’ll be okay.
My children don’t want oatmeal for breakfast every morning. We switch it up and try to make it as fun as possible, but it gets old when you eat it 150 times a year. The complaints about oatmeal for breakfast are getting old so I’m trying out some new healthy breakfast recipes. This one was a huge hit, and hey, my kids were eating zucchini for breakfast.
Ingredients:
- 2 Cups Whole Wheat Flour
- 1/2 tsp Salt
- 1 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 Cup Sugar (Optional if you are using maple syrup on top)
- 1/4 Cup Cocoa Powder
- 1 Small Zucchini, finely grated
- 2 Eggs
- 1 Cup of Milk (or more as needed)
- Mini Chocolate chips (optional)
Directions:
Sift all of the dry ingredients together in a mixing bowl. In a separate bowl, beat the eggs and then add to the dry mixture. Add your zucchini to the mix. Make sure it is finely ground or you will see chunks of it in the pancakes. Add the milk until you reach the desired consistency. Cook on a griddle or frying pan and serve with a sprinkle of powdered sugar, mini chocolate chips and maple syrup.
The kids were pretty scared when they saw zucchini on the counter at breakfast, but they’ve asked me to bring this recipe back, more than once. I hope it’s a hit at your house too!
